Halloumi ist ein halbfester Käse, der sich hervorragend zum Grillen eignet. Er stammt aus Zypern und wird traditionell auch in Griechenland, Libyen, Ägypten, in der Türkei und im Libanon hergestellt.
Halloumi ähnelt dem Mozzarella, da er auch in Salzlake eingelegt wird und eine faserige Struktur besitzt. Jedoch ist er kräftiger, fester und knirscht zwischen den Zähnen. Er wird aus einer Mischung aus Schafs- oder Ziegenmilch mit Kuhmilch hergestellt, doch es gibt auch Halloumi aus reiner Schafs- oder Ziegenmilch. Durch den relativ hohen Salzgehalt von zirka 2-3% ist der Käse bis zu einem Jahr haltbar. Ist er aus reiner Kuhmilch, ist er nicht so lange haltbar.
